She worked as a line cook, hostess, bartender, restaurant manager and wine consultant for world-renowned establishments such as Dean Fearing's The Mansion on Turtle Creek, Tom Colicchio's Craft-Dallas, No-bu, and Jean Georges in New York. She visited vineyards in Napa, Canada, Bordeaux and Burgundy and graduated from the International Sommeliers Guild. She went on to create pre-fixe and wine pairing menus for new and seasoned restaurants in New York City. After that, she began offering the Proud Wineaux tasting classes to spread education of the intricacies of wine and her former students have become certified sommeliers.Each class is straightforward with basics of sensory perception and blind-tastings. A grape is selected for discussion beforehand and interaction is highly encouraged. Students will acquire a vast amount of knowledge about wine and be able to master pairings in their daily life.
