Gelato is closer to ice milk, as the Italians have found that too much butterfat interferes with the transfer to the tongue of the fresh flavors Italian gelato is noted for. Both are dairy based desserts sweetened with sugar and flavored with ingredients like fruit or nuts. The best gelato will usually not stick above the rim of the bin, unless it has just been brought out. Many very good gelato places don’t even have an open bin, but keep the gelato in round metal containers with lids deep inside the counter. Bertoldo' s make all of gelato and store in cool place.
