The original foodies, Brandon Cahill and his father Mike, opened their first of two Smoke Shack BBQ food trucks in 2017. As lovers of all things barbecue, the father-son duo was inspired by Nana Jennette Cantone’s homemade barbecue sauce recipe to continue their business venture and expand into the Cahill franchise. While it may seem easy at first, running a restaurant from inside a truck has its challenges — but they never let that stop them. Mike Cahill grew up learning and working in his family’s butcher shop. This helped lead his son, Brandon, to study culinary arts at William Floyd High School and Johnson & Wales University. From a young age, Brandon was around the food truck industry, working for his late uncle, Charlie Cohan, at Riverhead Raceway and other fairs and events. Six years later, the pair used their knowledge and experience to open their first brick-and-mortar Smoke Shack BBQ restaurant in Mastic Beach, Long Island. Nowadays, hungry guests can get a taste of Brandon Cahill’s grandmother’s renowned barbecue sauce recipe at Smoke Shack BBQ. The eatery boasts an orange and green décor, a nod to the colors of the Cahill’s two food trucks. Long-time fans of the trucks from their state fair days or their former Center Moriches home base will be happy to recognize the menu’s most popular items, as well as newer, finger-licking additions!
